Hi! I’m Cristina Swenson.

In May of 2009, I was diagnosed with Celiac Disease via bloodwork. I went strictly gluten-free that day, ready to feel better. A year later, I still wasn’t feeling better, so I got a gall bladder test (normal) and a gastric emptying scan (slow).
I still wasn’t feeling better after adjusting my diet for gastroparesis, so in October of 2010, I got allergy testing done, and I discovered I’m allergic to beef, chicken, eggs, milk, bananas, carrots and corn. (I’m the most allergic to milk out of that group.) I also have TONS of environmental allergies, so my poor husband will never be able to own a cat.
I love to cook and can, and sometimes bake. I love good chocolate. I also love to read, so deciding exactly what I want to do in my “free” time can be a challenge.
I love to write restaurant and product reviews, since it can be so disappointing to pay a lot of money for a gluten-free product that ends up being terrible. I want to minimize that for you, my reader. I also like to blog about issues relating to Celiac Disease and food allergies — especially in social situations when knowing exactly what to do can be difficult.

    Most of it is fairly simplistic and there are other adrenal people who don’t completely agree with everything he says. There is more detailed stuff about the actual science in the appendix. I have found this book at a couple of different libraries, so I haven’t actually bought a copy. I think that it helps you to recognize whether you might be having some problems with adrenals. The first time that I read it, I think I was having less problems with the more obvious symptoms. The author is the one that has several supplements to help with the adrenals, but I guess many people feel they are a little hard to handle except the one I’m recommending.

I noticed a difference in how I was sleeping immediately, but it usually takes a week or two to fully know for certain if it is helping. If you’d like a bottle you can just reimburse us our price. The process is very up and down–which is normal. I felt better the first week or so and then had my first dip which was hard.

    I also wanted to tell you that we also use a product called Gluten Defense which is an enzyme for gluten. We use it for times when we might be exposed to gluten, like at a restaurant or someone else’s house. I would never use it to actually deliberately eat gluten. It also has an enzyme for casein which helps my mom with milk dramatically.
